- 1 tbsp sugar
- ½ cup unsalted butter, cold and cubed
- 3 tbsp ice-cold water
For the Filling:
- 2 cups fresh strawberries, sliced
- ¼ cup sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 tsp vanilla extract
For Finishing:
- 1 egg, beaten (for egg wash)
- 1 tbsp coarse sugar
Instructions
- Make the Dough: In a bowl, mix flour, salt, and sugar. Add cold butter and mix until crumbly. Slowly add ice water and knead into a dough. Wrap and chill for 30 minutes.
- Prepare the Filling: Toss strawberries with sugar, cornstarch, lemon juice, and vanilla. Let sit for 10 minutes, then drain excess juice.
- Assemble the Galette: Preheat oven to 375°F (190°C). Roll out dough into a 12-inch circle on a floured surface. Place on a baking sheet. Spoon strawberry filling into the center, leaving a 2-inch border.
- Fold the Edges: Gently fold the edges over the filling, overlapping slightly. Brush with egg wash and sprinkle with coarse sugar.
- Bake: Bake for 35-40 minutes or until golden brown and bubbly.
- Cool & Serve: Let cool slightly before slicing. Serve warm with whipped cream or ice cream.
