  • 1 cup diced tomatoes (canned or fresh)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup chopped cilantro

Instructions

  • Sauté the aromatics: Melt butter in a pan over medium heat. Add the onion and jalapeño, cooking until soft.
  • Add spices and tomatoes: Stir in cumin, paprika, and diced tomatoes. Cook for 2 minutes.
  • Melt the cheese: Lower heat and slowly pour in the milk. Stir in shredded queso cheese gradually, ensuring a smooth melt.

 

  • Finish and serve: Add salt, pepper, and cilantro. Mix in cooked chorizo if using. Serve warm with tortilla chips.
