- 1 cup whole milk or heavy cream
- 1 tbsp butter
- 1 small onion, finely chopped
- 1 jalapeño, diced
- 1 tsp cumin
- ½ tsp smoked paprika
- 1 cup diced tomatoes (canned or fresh)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup chopped cilantro
- ¼ cup cooked chorizo (optional)
Instructions
- Sauté the aromatics: Melt butter in a pan over medium heat. Add the onion and jalapeño, cooking until soft.
- Add spices and tomatoes: Stir in cumin, paprika, and diced tomatoes. Cook for 2 minutes.
- Melt the cheese: Lower heat and slowly pour in the milk. Stir in shredded queso cheese gradually, ensuring a smooth melt.
- Finish and serve: Add salt, pepper, and cilantro. Mix in cooked chorizo if using. Serve warm with tortilla chips.
