For the Chocolate Coating

  • 2 cups semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil (optional, for a smoother texture)

Instructions

Step 1: Prepare the Cherry Mixture

  1. Drain and finely chop the maraschino cherries.
  2. In a mixing bowl, combine the chopped cherries, powdered sugar, melted white chocolate, sweetened condensed milk, and vanilla extract.
  3. Stir until the mixture forms a thick dough-like consistency.

Step 2: Shape the Truffles

  1. Line a baking sheet with parchment paper.
  2. Scoop out small portions of the cherry mixture and roll them into 1-inch balls.
  3. If the mixture is too sticky, chill it in the fridge for 15 minutes before rolling.

Step 3: Melt the Chocolate

  1. In a microwave-safe bowl, heat chocolate chips and coconut oil in 20-second intervals, stirring in between until smooth.
  2. If using a double boiler, melt the chocolate over low heat, stirring frequently.

Step 4: Coat the Truffles
