Ingredients
For the Cake:
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 tbsp key lime zest
- ¼ cup key lime juice
- 1 tsp vanilla extract
- 1 cup buttermilk
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp key lime juice
- ½ tsp vanilla extract
Instructions
Preheat your oven to 325°F (163°C). Grease and flour a 9×5-inch loaf pan or a bundt pan.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat the butter and sugar until light and fluffy. This takes about 3-4 minutes.
Beat in the eggs one at a time. Then, mix in the key lime zest, juice, and vanilla extract.
Add half of the dry ingredients, mix, then pour in the buttermilk. Add the remaining dry ingredients and stir until just combined.
Pour the batter into the prepared pan and bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
While the cake cools, whisk together powdered sugar, key lime juice, and vanilla extract.
Drizzle the glaze over the cooled cake and let it set before slicing.
