  • ¼ tsp ground black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter or ghee

For the Potatoes:

  • 1 lb Yukon gold potatoes, diced into small cubes
  • 1 tbsp olive oil
  • 2 tbsp butter or ghee
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • ½ tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prep the Ingredients

  • Pat the steak bites dry with a paper towel and season with salt and pepper.
  • Dice the potatoes into small cubes to ensure even cooking.

2. Cook the Potatoes

  • Heat a cast iron skillet over medium heat.
  • Add olive oil and 2 tbsp butter. Once melted, add the potatoes, garlic, thyme, oregano, salt, and pepper.
  • Cook for 8-10 minutes, stirring occasionally until golden and crispy.
  • Remove the potatoes from the pan and set them aside.

3. Sear the Steak Bites

  • Increase heat to medium-high and add olive oil and butter.
  • Place the steak bites in a single layer in the skillet. Let them sear for 2 minutes without stirring to develop a crust.
  • Flip the steak and cook for another 1-2 minutes until browned but still tender inside.

4. Combine and Serve

  • Add the potatoes back to the pan and toss everything together.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh parsley and serve hot!
