  • 8 slices of white bread, crusts removed
  • 4 tbsp softened cream cheese
  • 2 tbsp unsalted butter, softened

  • Fresh dill or chives, finely chopped (optional)

Instructions

  1. Slice the cucumber thinly and lightly salt the slices. Let them sit for 10 minutes, then pat dry.
  2. Spread a thin layer of butter on one side of each bread slice to prevent sogginess.
  3. Spread cream cheese over the buttered side of half the bread slices.
  4. Arrange cucumber slices evenly on top of the cream cheese. Sprinkle with salt, pepper, and fresh herbs if desired.
  5. Top with the remaining bread slices, buttered side down.
  6. Trim the crusts and cut each sandwich into triangles or rectangles.
