  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes (optional)
  • 46 French rolls or hoagie buns
  • 1 cup sautéed green peppers and onions
  • 1 cup melted provolone or mozzarella cheese
  • ½ cup creamy horseradish sauce (optional)
  • ½ cup spicy giardiniera (optional)

Instructions

  1. Prepare the Beef: Season the beef with salt, black pepper, garlic powder, onion powder, oregano, and red pepper flakes.
  2. Sear the beef in a large pan over high heat until browned (3-4 minutes per side).
  3. Transfer to a slow cooker and pour in beef broth and Worcestershire sauce.
  4. Cook on low for 8 hours or until the beef is fork-tender and easy to shred.
  5. Shred the Beef and Make the Jus: Remove the beef and let it rest for 10 minutes.
  6. Shred the beef using two forks, then return it to the juices.
  7. Strain the broth into a bowl for dipping.
  8. Assemble the Sandwich: Lightly toast the bread.
  9. Load the shredded beef onto the bottom half of each roll.
