- 3 lbs beef chuck roast (or top round)
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon red pepper flakes (optional)
- 4–6 French rolls or hoagie buns
- 1 cup sautéed green peppers and onions
- 1 cup melted provolone or mozzarella cheese
- ½ cup creamy horseradish sauce (optional)
- ½ cup spicy giardiniera (optional)
Instructions
- Prepare the Beef: Season the beef with salt, black pepper, garlic powder, onion powder, oregano, and red pepper flakes.
- Sear the beef in a large pan over high heat until browned (3-4 minutes per side).
- Transfer to a slow cooker and pour in beef broth and Worcestershire sauce.
- Cook on low for 8 hours or until the beef is fork-tender and easy to shred.
- Shred the Beef and Make the Jus: Remove the beef and let it rest for 10 minutes.
- Shred the beef using two forks, then return it to the juices.
- Strain the broth into a bowl for dipping.
- Assemble the Sandwich: Lightly toast the bread.
- Load the shredded beef onto the bottom half of each roll.
- Add sautéed peppers and onions on top of the beef.
- Melt cheese over the sandwich using an oven broiler.
- Spread horseradish sauce on the top half of the bun.
